Introducing a soy-free, gluten-free, organic certified alternative to fish that literally grows on trees. Banana blossom is a large, purple-skinned flower that grows at the end of a bunch of bananas. Its tightly packed petals are neutral in flavor but mimic the flaky texture of fish, making it an ideal whole-food substitute. To prepare, we recommend patting the banana blossom dry with a clean cloth or paper towel before battering and frying, or season as desired and add it to your stir fry. The White Dapperling, Leucoagaricus leucothites. It is edible but this is one for the more advanced forager as it is very similar to some deadly poisonous mushrooms.

Another one popping up all over the country is Honey Fungus, spotted on some of our foraging walks.
Tasty and very common mushroom but can give a small amount of people gastric upsets so should be tried in small amounts the first time it is eaten. It should always be cooked before consumption.
Make sure you are familiar with poisonous lookalikes: Sulphur Tufts and Funeral Bells.
Honey Fungus has brownish or yellow scales on the cap and underside of the ring, which the other two lack.

The Hedgehogs are in! 🍄
The Hedgehog Fungus is one of our favourite mushrooms to eat and they are one of the easiest to identify. See the little spines on the underside of the cap? That's where the name comes from.

These were picked yesterday in Southern England but they seem to be flushing right now in different parts of the country. More will come throughout the Autumn.

Love damson jam.
We added damsons to gin and left it till Christmas. Lovely taste but the best bit was leaving damsons to dry off a bit and covered them in dark chocolate. Lovely extra Christmas present with a kick. Have done the same with sloes.
Mint condition. I was lucky enough to find yellow damsons. They’re currently fermenting.
